Tobleroneparfait with berry compote

(4 persons)

3 dl whip cream
150 gr Toblerone
3 egg yolks
2 dl powder sugar (icing sugar)
1/2 vanilla pod
For the berry compote:
1 dl frozen raspberries
1 dl frozen strawberries
1 dl frozen blackberries
1/2 tsp lemon juice
1/2 dl sugar

1. Whip the cream until thick
2. Melt the Toblerone
3. Whip the powder sugar and egg yolks until fluffy/airy
4. Whip the melted chocolate in the egg/powder sugar mixture until smooth
5. Add the whipped cream with the egg/chocolate mixture
6. Pour the mix into serving bowls and put in freezer for approx. 4 hours (or more)
7. Mix the berries, lemon juice and sugar an cook carefully until the berries starts to fall apart. Let them cool before serving
8. Take out the parfait approx. 10 minutes before serving
9. Add the berries on top and serve
