Aloo Gobi

Another simple recipe for Indian food is aloo gobi, which literally means in Hindi potato cauliflower.

  • Oil for frying
  • 1 tablespoon curry leafs
  • 1 teaspoon mustard seeds
  • 1/2 teaspoon asafoetida
  • 1/2 teaspoon turmeric
  • 1 onion
  • 2 garlic cloves (or a teaspoon garlic ginger paste)
  • 1 small green chili pepper
  • 6 potatoes
  • 1 small cauliflower
  • pinch of salt
  • 1 teaspoon coriander powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala
  • lemon

Wash and peal the potatoes and split the cauliflower into florets. The cauliflower can be blanched in hot water with turmeric or used as is.

Heat oil in a pan and then put in the first 4 ingredients. Then add the onion, chopped cilli and garlic and sauté until soft. Add in diced potatoes and cauliflower florets trying for 5 min. Afterwards put in a cup of water and  the salt, cover with a lid, and let it simmer until the potatoes are cooked through.

The process should look pretty much like the picture above. Once the potatoes are cooked add coriander, cumin and garam masala powders together with lemon and let it cook for another 5 to 10 minutes.

This dish goes really well with flat bread or parathas and raita.
