This is a classic and everybody has their own twist on it. Here is a base recipe that Moritz does really well, feel free to get creative with it by adding spices and herbs.


  • 1 can chickpeas (or 120 g dried)
  • 2 tablespoons lemon juice
  • 2 teaspoons tahin
  • 1/2 teaspoon salt
  • 3 tablespoons olive oil
  • 1 fresh garlic clove


If you are using dried chickpeas then you should first soak them for 12 hours in water, then rinse them and boil them in fresh water for 40 minutes until they are soft.

Rinse the chickpeas well, especially if they are canned, and leave them in a strainer to drain.

Put everything in a bowl and mix it with a wand mixer until it becomes a fine paste. You can decorate it with a bit of olive oil and paprika powder.


Tip: To serve it in nice bowls you can use a piping cone to make fun designs.
