This is another twist of the Eggplant Sandwich that I posted some time ago. The difference is that this time I am using buns that I warm in the oven and I made a burger sauce that adds creaminess and rounds it up.
- burger bunns
- dry tomatoes
- olive oil
Prepare the eggplant and mushrooms the same as for the Eggplant Sandwich by layering them in an oven form with a bit of oil and salt, then baking them until done.
For the sauce you take all the sauce ingredients, put them in a blender and you get a nice creamy and tomatoey burger sauce.
I usually take the buns and bake them for a couple of minutes in the oven so that they are also warm. After that, stack everything together in a fluffy, scrumptious meal!
