I got some golden syrup from England so I decided to have pancakes for breakfast today! Similar to crepes you can also make delicious fluffy vegan pancakes.
- 1 cup flour
- 1 cup soy milk
- 1 small teaspoon vinegar
- 3 tablespoons coconut oil
- 1 topped teaspoon baking powder
- 2 tablespoons sugar (more if you like them sweeter)
- 1 pinch vanilla powder
- 1 pinch salt
In a cup add soy milk and vinegar together and set aside. Mix all dry ingredients well and then slowly incorporate the milk and coconut oil. The resulting dough should be like a mousse, not solid but not runny either. Add more milk if it feels too stiff.
Once the dough is ready, heat up a nonstick pan and add the dough in with a tablespoon. I make them tablespoon sized since they are easier to flip.
Add whatever topping you wish and there you go! Perfectly fluffy pancakes.
